Ingredients
  

  • 4 Medium Russet Potatoes Sliced evenly
  • 12 oz Smoked Sausage Sliced into rounds
  • 1 Medium Onion Sliced
  • 1 Bell Pepper Sliced any color
  • 2 tbsp Olive Oil For sautéing
  • 2 cloves Garlic Minced
  • 1 tsp Paprika
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt Adjust to taste
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Thyme
  • 1/4 cup Chicken Broth Optional for moisture

Instructions
 

  • Prepare the ingredients. Slice the potatoes, sausage, onion, and bell pepper evenly. Mince the garlic.

  • Heat the skillet. Add olive oil to a large skillet over medium heat.

  • Brown the sausage. Add the sliced sausage to the skillet and cook for 3-4 minutes until browned. Remove and set aside.

  • Sauté the vegetables. In the same skillet, add onions, bell peppers, and garlic. Cook until softened.

  • Add potatoes and seasonings. Stir in sliced potatoes and season with paprika, black pepper, salt, onion powder, garlic powder, and thyme.

  • Cook until tender. Stir occasionally, cooking for 10-15 minutes until the potatoes soften. Add chicken broth if needed.

  • Combine with sausage. Return the sausage to the skillet and mix well. Cook for another 5 minutes.

  • Rest and serve. Let the dish rest for 5 minutes before serving.
