Ingredients
  

Main Ingredients

  • 1.5 pounds russet potatoes peeled and cubed - use fresh russet potatoes
  • 1 pound ground beef lean ground beef recommended
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 cup beef broth low sodium preferred
  • 1 can 10.5 oz cream of mushroom soup - any brand works
  • 1/2 cup sour cream full-fat recommended
  • 1 tbsp tomato paste concentrate
  • 1 tsp garlic powder optional extra flavor
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp pepper adjust to taste

Optional

  • 1 cup green beans trimmed and cut - optional for added veggies
  • 1/2 cup sliced mushrooms optional for additional flavor

Instructions
 

  • Brown ground beef in a skillet over medium heat until fully cooked.

  • Drain excess grease from the skillet.

  • Sauté diced onion and minced garlic in the skillet until translucent.

  • Layer cubed potatoes in the crockpot.

  • Add browned ground beef and sautéed onions and garlic on top of potatoes.

  • In a mixing bowl, combine beef broth, cream of mushroom soup, sour cream, tomato paste, garlic powder, salt, and pepper.

  • Pour sauce evenly over the ingredients in the crockpot.
  • Cover and cook on low for 6-8 hours (or high for 3-4 hours) in the crockpot.

  • Stir halfway through cooking to ensure even cooking.
  • Adjust seasoning and let rest for 10 minutes before serving.
