Instructions
 

Prepare the Caramel.

  • In a medium saucepan, heat 1/2 cup granulated sugar over medium heat until it dissolves and turns a deep amber color. Then carefully add 1/4 cup milk and 2 tablespoons butter while stirring continuously. Allow the mixture to simmer for 2–3 minutes until smooth.

Coat the Rice Cakes.

  • Gently fold 1 pound of plain rice cakes into the warm caramel sauce. Stir on low heat for 3–4 minutes to ensure each piece is evenly coated without breaking.

Bake or Set the Mixture.

  • Option A: Transfer the mixture into a greased baking dish, preheat your oven to 350°F (175°C), and bake for 10 minutes.
  • Option B: Alternatively, let the mixture set at room temperature for 10 minutes for a no-bake version.

Add the Finishing Touches.

  • Drizzle an extra 2 tablespoons of caramel sauce on top, and if desired, garnish with a pinch of cinnamon or chopped nuts. Allow the dessert to cool slightly before serving.
