Ingredients
  

  • 1 pound smoked sausage sliced into 1/4-inch rounds
  • 2 pounds russet potatoes peeled and cut into 1/2-inch cubes
  • 1 large onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon Cajun seasoning
  • Salt and black pepper to taste
  • 2 green onions chopped (for garnish)

Instructions
 

Sauté the Sausage

  • Heat vegetable oil in a large cast-iron skillet over medium heat.

  • Add sliced smoked sausage and cook until browned, about 5 minutes.

Sauté the Vegetables

  • In the same skillet, add diced onion and green bell pepper.

  • Cook until softened, approximately 3-4 minutes.
  • Add minced garlic and cook for an additional minute.

Add Potatoes and Seasonings

  • Add cubed potatoes to the skillet with the vegetables.

  • Season with Cajun seasoning, salt, and black pepper.

  • Stir to combine all ingredients evenly.

Deglaze and Simmer

  • Pour chicken broth into the skillet, scraping up any browned bits from the bottom.

  • Return the browned sausage to the skillet.

  • Bring the mixture to a boil, then reduce heat to low.
  • Cover and let simmer for 20-25 minutes, or until potatoes are tender.
