- 1 pound smoked sausage sliced into 1/4-inch rounds
- 2 pounds russet potatoes peeled and cut into 1/2-inch cubes
- 1 large onion diced
- 1 green bell pepper diced
- 2 cloves garlic minced
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- 1 teaspoon Cajun seasoning
- Salt and black pepper to taste
- 2 green onions chopped (for garnish)
Sauté the Sausage
Heat vegetable oil in a large cast-iron skillet over medium heat.
